Based on a classic béchamel sauce, we add a specially prepared wine sauce that balances between French white wine sauce and vermouth (herb wine) sauce. Plenty of fresh cream is also used to enhance the richness and aroma.

Tenderloin steak is coated with a traditional Japanese warishita sauce and served over a bowl of rice. Generous amounts of shredded shiso leaves and sweet-salty seasoned shimeji mushrooms create a well-balanced harmony of flavor, aroma, and texture.
